Peanut Butter Squares

Here's another treat from the cookbook, Fixate, by Autumn Calabrese.  The recipes are easy to follow, do not involve many steps, and are good for non-bakers/cookers like me!  I actually enjoy being in the kitchen :-)

Today's recipe:  Peanutty Peanut Butter Squares.  
(I told you I have an addiction to nut butters.)


The recipe calls for peanut butter, honey or maple syrup, 2 eggs, vanilla extract, and baking soda.  That's it!  Mix it together, try not to lick the beaters to much, pour in a pan and bake at 350.  It's just that simple!


They are chewy, peanut buttery, and delicious!  Each square (recipes makes 16 squares) equals 1 yellow and 2 1/2 teaspoons on the 21 Day Fix portion control system.

Energize - I liked that this gave me a boost of high energy and lasted through my 30+ minute workout and then some!  I wasn't overly jittery, it was more of a "alright, let's go, get this done" type of energy feeling.  I took it before a late afternoon workout and didn't experience any sort of huge low or drop and didn't have any issues falling asleep.  I ordered this and can't wait to have it before all my workouts; home and running.

****Good for those who have low energy, lack of motivation, and lack of focus





Hydrate - I only had a sample packet of this one and I used it during the Super Sunday 90 minute workout.  I liked the taste and I felt like I had energy and endurance to complete the workout.  It does contain electrolytes which you need to consume during a tough workout/longer run.   This would be a better alternative to the other sports drinks on the market.  I ordered this as well and am anxious to start using it during my workouts!

**** Good for those who become easily tired during the workout, hit a wall, or have poor endurance






Recover - I bought a tub of the Chocolate Chill Recover at The Core (it's the most amazing store that is put together for Beachbody Coaches during our Summit Conference!) and have used it quite a few times.  Typically, after a long, hot & humid, sweaty run!  I really like the taste and I definitely do not feel as sore the next day, so I know it's working.   However, I choose to live a dairy-free lifestyle and avoid soy as much as I can.  This product contains milk and soy, I don't think very much, but I will most likely rotate this with the P90X Results & Recovery to keep my dietary needs in tact.

**** Good for those who are too sore to exercise and are feeling wiped out after workouts

Fixate Recipe

Autumn's Banana Apple Muffins




I have always LOVED to eat but I don't necessarily enjoy cooking/baking.  I tend to make the same dishes over and over and over again because they are easy and I know the recipe.  I know the ingredients I need, I have an idea of how long to bake/cook it, I know what substitutions will work, and best of all, I know I like it :-)

I have really enjoyed making some of the recipes from Fixate, Autumn Calabrese's new cookbook, because they are easy, use ingredients that I typically have in my pantry and fridge, and I know they are going to taste awesome, PLUS, they are healthy!  I also appreciate that the cookbook contains gluten free, dairy free, vegan, and paleo friendly options. 

Last week I made these delicious muffins.  I did not have 2 of the ingredients, bananas, (which is odd for me) and butter (I don't eat dairy).  I used applesauce for the banana and coconut oil for the butter.   I also added a few blueberries on top.

I think the applesauce made the batter too liquidy and I didn't think to add more flour.  I had to bake them a little longer than the suggested time.  The tops started to burn because they weren't quite cooked entirely.  Despite all that, they were quite tasty and I'm anxious to make them again with bananas!

Autumn's Banana Apple Muffins
Serves: 9 (1 muffin each)
Container Equivalent:  1 purple, 1 blue

Ingredients:
2 large eggs, lightly beaten
1 cup mashed ripe banana (about 2 medium bananas)
1 Tbsp.  organic grass-fed butter, melted or coconut oil, melted
1 1/2 cups almond flour
3/4 tsp. baking soda, gluten free
1 dash sea salt (or Himalayan salt)
1/2 cup chopped apple (about 3/4 medium apple)  I used Granny Smith

Directions:
1.  Preheat oven to 350 F.
2.  Prepare nine muffin cups by lining with muffin tin layers or coating with muffin spray.
3.  Combine eggs, banana, and butter in a medium bowl; mix well; set aside.
4.  Combine almond flour, baking soda, and salt in a medium bowl; mix well.
5.  Add almond meal mixture to egg mixture; mix until blended.
6.  Add apple; mix until just blended.
7.  Divide batter evenly between prepared muffin cups.
8.  Bake 16 to 18 minutes, or until golden brown and toothpick inserted into the center comes out clean.
9.  Transfer muffins to rack; cool.
